Abstract
Manganese (Mn) is an essential element. It is naturally found in drinking water and food products and added to other food products, such as milk formulas, parenteral nutrition, and supplements. Mn is necessary for the functioning of enzymes, such as arginase, superoxide dismutase (Mn isoform), and glutamine synthetase. Exposure to high levels of Mn in food or the environment might cause neurotoxic effects, with symptoms analogous to those observed in Parkinson's disease. Studies on the health effects of Mn have been performed, providing insight on its role in physiology and pathology. This article will focus on Mn in food products and its effects on human health.
